Bari Green and Lou Russo give an overview of composting.

Carbon Layer

A layer of high-carbon medium (in this case straw) is layered and mixed in with previous layers. The pile is 5x5 feet and is placed under a roof - important in areas of high rainfall to reduce nutrient loss from the compost.

Nitrogen Layer

A layer of high-nitrogen medium is added, in this case Comfrey leaves.

After another layer of straw is placed on top of the Comfrey, then kitchen scraps and Macadamia nut compost w/some soil is added for nitrogen and other nutrients. This process of alternating and mixing carbon-rich with nitrogen rich media will continue until the pile is 5 ft. high.
